Lately, I have been on a mission to cook food at home instead of going out. It’s cheaper, I really like cooking, and it can be way better for you.
However, going out works better for me and my boyfriend because we have two very different diets. I am on Ideal Protein – a high protein, low carb/fat diet…my boyfriend on the other hands eats all the carbs!
So, when it comes to meal planning for the week I have been trying really hard to find meals that can serve double duty. It has been a challenge and I thought I would share it with everyone since I am sure some of you out there might be having the same problem. Here are the recipes I have been working with lately!
So, you may be asking the same question I have…what exactly is a Buddha bowl? Well, I did a little research and basically, it’s just a trend where you create beautiful looking bowls that aren’t only pleasant to look at, but also really good for you too!
From what I gather the only reason it’s called a “Buddha” bowl is that there is a “balance” – whether that is a color balance or a nutritional balance. Either way, these babies are super easy to make, delicious, and a perfect idea for meal prepping!
Another day…another recipe for a casserole! I feel like it has been the summer of casseroles for me. They are easy to make, you can eat off of them for days, and it feels like comfort food!
Plus, it’s a little bit of a challenge to try and make them healthy. Casseroles usually have a ton of cream, cheese, bread, etc. in them. Working my way around ingredients that aren’t Ideal Protein approved has been a fun puzzle to figure out!
I think this casserole might be my favorite! I have made this Southwest Chicken Cauliflower Casserole twice over the past month!
