Just when I think there is nothing else I can use cauliflower for…I come up with a new idea – Cauliflower Muffins!
Yep! These babies only have 8 ingredients – none of which are bread or cheese. That means these muffins are gluten-free, dairy-free, keto, low-carb, and a whole bunch of other diets friendly!
They are super easy to make and hold up well. You can pick them up and they won’t fall apart. I had these with some zoodles and bolognese sauce and they stood in for garlic bread. I feel like they would also be good for breakfast, to serve with soup, or just as a snack!
I love zoodles! And I love zoodles even more when I don’t have to zoodle a zucchini myself 🙂 So, when I found zoodles ready to go at Aldi, my day was made! This recipe idea stemmed souly from the fact that Aldi had zoodles in stock. Also, I wanted to make some protein sources for meal prep that I could freeze for later use.
So, I made a crap ton of meatballs, ate some of them last week, and stored the rest in the freezer for later.

Another day…another recipe for a casserole! I feel like it has been the summer of casseroles for me. They are easy to make, you can eat off of them for days, and it feels like comfort food!
Plus, it’s a little bit of a challenge to try and make them healthy. Casseroles usually have a ton of cream, cheese, bread, etc. in them. Working my way around ingredients that aren’t Ideal Protein approved has been a fun puzzle to figure out!
I think this casserole might be my favorite! I have made this Southwest Chicken Cauliflower Casserole twice over the past month!
