I really enjoy my subscription to Eating Well. They always provide great recipes to try out. This month’s issue was no different. They shared a recipe for Creamy Cucumber, Radish & Tomato Chopped Salad and I had to give it a go!
I consume so much cauliflower…I think I might become cauliflower one day! It’s just so versatile and when it comes already riced in the frozen food section it saves me time!
So, this time around I decided to make cauliflower burger buns. Not just any burger buns, EVERYTHING buns! The salty bagel deliciousness with a juicy burger is exactly what I was in the mood for this week!
So, you may be asking the same question I have…what exactly is a Buddha bowl? Well, I did a little research and basically, it’s just a trend where you create beautiful looking bowls that aren’t only pleasant to look at, but also really good for you too!
From what I gather the only reason it’s called a “Buddha” bowl is that there is a “balance” – whether that is a color balance or a nutritional balance. Either way, these babies are super easy to make, delicious, and a perfect idea for meal prepping!
Sloppy Joes…an oldie, but a goodie. Or if you’re from Western Maryland…Steamers…an oldie, but a goodie! Yes, out my way we call them Steamers. My grandmother used to make the best Steamers! No Manwich for her though. She would make them with plenty of ketchup – which means lot of added sugar.
