Cauliflower “Tortilla” Tacos

Guys…I think I may have one-upped myself with this one. This recipe may be better than the very popular Lettuce “Burritos” with Mexican Cauliflower Rice.

I have been trying to make the perfect cauliflower tortilla for a while now. Time after time they didn’t hold up. You couldn’t pick up the tortillas without them falling apart or they got weird when you refrigerated them. But, alas!! I finally got the right combination of ingredients…and for my fellow Ideal Protein folks out there, there is not a shred of cheese in them!

Low Carb Chicken Pesto Zoodles

I think I have a new favorite recipe! I used to say that my Lettuce Burritos were my favorite, but they may have to move over…or at least make room in the recipe rotation for my Low Carb Chicken Pesto Zoodles!

This dish makes me feel like I am having an Italian dinner. I can even spin the zoodles on my fork! I was inspired by Green Giant’s Veggie Spirals. These make it so easy to use zoodles in my cooking. I don’t have to prep anything. I just steam them in the microwave, drain, and serve!

I have even developed an Ideal Protein friendly pesto, that is nut and dairy-free, for those on phase 1 of the diet. Or if you are fine with nuts and dairy, you could easily make this with your own pesto recipe or pick up your favorite jar pesto.

Turkey Crust Taco Pizza

If you can’t tell I am still on a pizza kick! I have continued on my search for good pizza alternatives. I was on one of my favorite blogs – I Breathe, I’m Hungry and came across this gem of a recipe: Chicken Crust Taco Pizza.

I know that for Ideal Protein cheese is a no go…and it’s hard to get around cheese when all you want to do is make pizza. So I decided to compromise and remove some of the cheese from the existing recipe. I talked to my IP coach and she agreed that this was a smart move. It’s not that cheese is bad for ketosis, but it does have a lot of fat. If you choose sharp cheeses like parmesan and cheddar the fat content will be lower and you will continue to have success while on Ideal Protein Phase 1.

I also removed all other types of dairy from the recipe like the sour cream and eliminated other sources of fat like the avocado. Here is my version of the recipe, I hope you all enjoy it!!!
