Lately, I have been on a mission to cook food at home instead of going out. It’s cheaper, I really like cooking, and it can be way better for you.
However, going out works better for me and my boyfriend because we have two very different diets. I am on Ideal Protein – a high protein, low carb/fat diet…my boyfriend on the other hands eats all the carbs!
So, when it comes to meal planning for the week I have been trying really hard to find meals that can serve double duty. It has been a challenge and I thought I would share it with everyone since I am sure some of you out there might be having the same problem. Here are the recipes I have been working with lately!
No matter your Valentine’s Day status this year I think you need to treat yourself! Valentine’s Day (or as I lovingly call it – Single’s Awareness Day) can be another hard holiday for those of us trying to stay on our healthy path. Whether you have a Valentine or not the chocolate and candy hearts are everywhere!
So, I put together a super easy meal that you can make for yourself or your loved ones that will make you forget all about those sweet treats (I know wishful thinking…but this meal is pretty darn good!)
I think I have a new favorite recipe! I used to say that my Lettuce Burritos were my favorite, but they may have to move over…or at least make room in the recipe rotation for my Low Carb Chicken Pesto Zoodles!
This dish makes me feel like I am having an Italian dinner. I can even spin the zoodles on my fork! I was inspired by Green Giant’s Veggie Spirals. These make it so easy to use zoodles in my cooking. I don’t have to prep anything. I just steam them in the microwave, drain, and serve!
I have even developed an Ideal Protein friendly pesto, that is nut and dairy-free, for those on phase 1 of the diet. Or if you are fine with nuts and dairy, you could easily make this with your own pesto recipe or pick up your favorite jar pesto.
Looking for a quick weekday dinner that you can throw together in 30 minutes? Then my “Low Carb Broccoli Tot Sloppy Joe Casserole is for you! It’s a delicious throwback and reminds me of something I would eat when I was a kid. Of course this version is healthier then what I ate as a kid, but equally as satisfying!
