Low Carb Sloppy Joes, Two Ways

Sloppy Joes…an oldie, but a goodie. Or if you’re from Western Maryland…Steamers…an oldie, but a goodie! Yes, out my way we call them Steamers. My grandmother used to make the best Steamers! No Manwich for her though. She would make them with plenty of ketchup – which means lot of added sugar.

Pork Chops with Dijon Gravy, Cauliflower Rice, and Broccoli

For this week’s recipe, I went in search of something involving pork. Boneless pork chops were on sale at the store and I had bought a large pack. I wanted to cook once on Sunday and have leftovers all week.

I was researching on SkinnyTaste (one of my favorites) and came across her recipe for Pork Chops and Dijon Herb Sauce.

Low-Carb Jambalaya

I am always looking for a low-carb alternative to my favorite meals. Basically, anything with rice in it has been a struggle to find alternatives for. But, with the availability of frozen, riced cauliflower, my options have opened up quite a bit!

This time around I decided to tackle a low-carb Jambalaya. By adding extra veggies and using riced cauliflower I made a delicious, healthier version of this one-pot meal.
