Here is another easy recipe for everyone! These Mini Turkey Meatloaves are delicious and perfect for lunch or dinner. I even went the extra mile and made homemade, low-carb ketchup!
Ketchup is one of those things that always gets me while trying to do Ideal Protein/low-carb. I love me some ketchup…but its FULL of sugar. So, I decided to just make my own. It took me a couple tries to get the perfect blend, but I think I finally got it!
Mini Turkey Meatloaf with Homemade, Low Carb Ketchup

Ingredients
For the Ketchup:
- 6 oz tomato paste
- 3 tbsp white vinegar
- 1/2 cup water
- 3 packets of Splenda
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tsp paprika
- 1 tbsp chili powder
- 1/2 tsp salt
- 1/2 tsp pepper
For the Meatloaf:
- 1 pound ground turkey
- 1 large egg
- 2 oz parmesan cheese
- 2 tsp garlic, minced
- 2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 3/4 cup of the Ketchup (about half of what you prepared), divided
Directions
- Preheat the oven to 425-degrees and prepare a baking sheet with foil and cooking spray.
- Next, prepare the ketchup. Whisk all the ingredients in a bowl until combined.
- Then, prepare the mini loaves – mix the turkey, egg, cheese, spices, and 1/2 cup of the ketchup you just prepared, with your hands, until combined.
- Form 4 small freeform loaves and place them evenly on the prepared baking sheet.
- Place in the oven for 25-30 minutes, or until cooked through.
- Remove the loaves from the oven and brush the tops with remaining 1/4 cup of ketchup.
- Enjoy!
Notes: Serve with whatever vegetable you are feeling that day.
Also, the loaves freeze really well. So, you could easily double the recipe and save some for later.
