I have to give myself some credit…I did pretty well foodwise this weekend. Even with the Super Bowl (or let’s be honest…This Is Us!) on I didn’t want to go completely off the rails. So, I decided to watch the game while enjoying some Pepper Nachos from SkinnyTaste and felt like that was a good compromise.
However, all night all I really wanted was some chicken wings! So, this week I decided to experiment with some spicy chicken wing options.
I knew that I didn’t want to use actual chicken wings because they usually still have the skin on…and dealing with that would be too much. I wanted something super easy and versatile. I wanted to be able to eat the chicken on its own, pair it with celery, or even have it on top of a salad.
In the end, I decided to go with boneless, skinless chicken breast that I diced to about 1.5-inch cubes. This made sure that this recipe would be Ideal Protein Phase 1 friendly and I just ended up with boneless wings that I baked in the oven. Frank’s Red Hot was also definitely still included in the mix…can’t go wrong there!

Baked Spicy Red Hot Chicken Bites

Ingredients
- 1 pound boneless, skinless chicken breast – cut into rough 1.5 inch cubes
- 1 tbsp olive oil
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp paprika
- 1 tbsp cumin
- 1 tsp salt
- 1 tsp mustard powder
- 1 tsp oregano
- 1 tsp black pepper
- 1 cup Frank’s Red Hot Sauce
Directions
- Preheat oven to 400 degrees.
- Line a baking sheet with aluminum foil and place a cooling rack (that is similar in size) on top.
- Place the cubed chicken into a bowl and drizzle with oil. Toss until all pieces are coated.
- In a separate bowl mix all the seasonings – garlic powder, onion powder, paprika, cumin, salt, mustard powder, oregano, and black pepper.
- Sprinkle the seasoning mix on the chicken. Toss until all pieces are coated.
- Arrange the seasoned chicken on the baking sheet/cooling rack in a single layer.
- Place in the 400-degree oven and bake for 15 minutes.
- After 15 minutes, flip the chicken and bake for another 10 minutes.
- Remove the chicken from oven and place in a clean bowl.
- Pour hot sauce on the chicken and toss until all pieces are coated.
- Place back on the baking sheet and cook for an additional 10 minutes.
- Enjoy!
Tips: Serve with celery or on top of a salad.
